Open Cell meets Ruby Tandoh

The V&A’s forthcoming exhibition FOOD: Bigger than the Plate will feature four cheeses cultured from human bacteria.

We have been asked to visit 4 celebrities to collect their unique ‘microbial portrait and to turn them into cheese. This week Ruby Tandoh, writer and former British Bake Off candidate visited Open Cell and learned all about making traditional cheese from sourcing the raw milk to aging the cheese.
